Red Ripe Tomatoes, 4 pounds Italian tomato
Extra Light Olive Oil, 3 tbsp
Basil, 1 tbsp
Parmesan Cheese, grated, .25 cup
Slice tomatoes into 3/8 inch slices. Toss in a bowl w/ olive oil, basil, and cheese. Place a baking rack on a sheet pan and arrange tomatoes in a single layer on rack. Bake for 2- 3 hours.
Remove rack from oven and cool tomatoes for 1 hour. Store in an air tight container.
Yields 1 cup.
