South Beach Diet Breakfast Bowl

Introduction

The original recipt called for 2 t. olive oil and 1 t. trans-fat-free margarine in which you cook the eggs. I just used Pam spray and it worked out fine. Ingredients

    1 can (15.5 oz) pinto beans, rinsed and drained
    1 c. no-sugar added prepared salsa
    4 large eggs
    3 large egg whites (6 tablespoons)
    1/2 t. cumin
    1/4 t. black pepper1 avocado

Directions

Combine beans and salsa, warm. Wisk together the remaining ingredients (except the avocado) and cook in fry pan until the consistency of scrambled eggs. Mix the bean mixture with the eggs. Divide among 4 bowls and top with 1/4 of the sliced avocado.
