Thai Cantaloupe Salad

Introduction

A new, refreshing way to eat cantaloupe. The mixture of flavors is very unexpected and very delicious! This recipe is great for summer pitch-ins. It's important that the cantaloupe is ripe with a lot of flavor. If it's fragrant, it's probably perfect. I can't take credit for this. I've tried it from others and went searching the Internet for a recipe. This is what I found and tweaked a little for my own taste (blogger adapted it from the book "The Splendid Table's How to Eat Supper"). A new, refreshing way to eat cantaloupe. Ingredients

    1 large, ripe, frangrant cantaloupe, peeled and cut into bite-sized pieces

    1/3 cup fresh basil, thinly sliced

    1 jalapeno, diced (seeded or not), use a red chile for more
    heat

    3 to 4 Tbsp fresh lime juice (about 1 lime)

    1/2 tsp fish sauce (more or less to taste)

    Generous pinch sugar

    Coarse salt and freshly ground pepper to taste

Directions

Gently toss all ingredients together. Taste and adjust amounts of fish sauce, lime juice, sugar, salt and pepper to preference. Serve immediately or chill for a few hours.

Makes 8 servings.
