1 box (14.5 oz) penne rigate (Ronzoni Smart Taste)
1/2 cup frozen peas
1 1/2 tsp olive olive
1/3 cup chopped shallots
1/4 cup vodka
2 cups marinara sauce
4 oz fat-free cream cheese, broken into chunks
2. Meanwhile, heat olive oil in a medium saucepan. Add shallots; cover and cook over medium heat 3 minutes.
3. Add vodka; boil until evaporated, about 2 minutes. Stir in marinara sauce; simmer 2 minutes to blend flavors.
4. Stir in cream cheese and cook, stirring until melted.
5. Drain pasta and peas. Return to pot; add sauce and gently toss to combine.
