Vegetarian Brown Rice Quesadilla

Ingredients

    2 or 3- Low Carb whole wheat tortillas
    1 cup instant brown rice (uncooked)
    1/2 small zucchini
    1 cup black beans
    1/2 or 3/4 cup shredded colby jack cheese
    salt and pepper to taste
    a sprinkle of taco seasoning

Directions

Cook brown rice according to package directions. When finished, sprinkle some taco seasoning on it to taste.

Cook zucchini slices in a skillet for a few minutes on each side.

Spray pan with olive oil spray. Lay out tortilla. Add 1/3 cup brown rice, chop 2 slices of cooked zucchini and add on top of rice, spoon 1/3 cup black beans on, then sprinkle with 1/4 cup cheese. Fold the tortilla in half and cook on both sides for about 5 minutes each. You can season the beans with salt and pepper if you wish.

I eat my quesadilla with fresh salsa. Enjoy!
