Carrot "Cake" (without the cake!)

Introduction

A great substitute when you're craving carrot cake, but don't want all the calories! A great substitute when you're craving carrot cake, but don't want all the calories!
Number of Servings: 2

Ingredients

    Carrots, raw, 1 cup, grated
    Pumpkin Pie spice, 1 tsp
    Butter, salted, 1 tbsp
    Brown Sugar, 1 tsp packed

Directions

Place shredded carrots in a microwaveable bowl and cover with plastic wrap. Pierce the plastic wrap a couple times for the steam to release. Microwave for about 1- 1.5 minutes. The water from the carrots will steam them inside the bowl.

When they are soft, stir in butter, pumpkin pie spice, and brown sugar.
