Tasty TVP "Meat"loaf

Introduction

I wanted an alternative "meat"loaf tonight that didn't involve lentils but did, however, involve a bunch of superflous ingredients around my house. Came out pretty meaty, so be warned! I wanted an alternative "meat"loaf tonight that didn't involve lentils but did, however, involve a bunch of superflous ingredients around my house. Came out pretty meaty, so be warned!
Number of Servings: 4

Ingredients

    1 1/2 cup Texturized Vegetable Protein Granules (TVP)
    1 1/4 cup water
    1 tsp Better Than Boullion "Beef" Base
    1 tsp Worstershire sauce (vegetarian)
    1/4 cup Ketchup
    1/2 Tbsp Olive oil
    1 large clove garlic, minced
    2 carrots, grated
    1 stalk celery, diced
    1/4 cup onion, diced
    1 tsp oregano
    1/2 tsp black pepper
    1/4 cup oat flour
    3 Tbsp vital wheat gluten
    Ener-G Egg Replacer for 2 eggs (1 Tbsp replacer, 1/4 water)


Directions

1. Preheat oven to 350 degrees.
2. Whisk together 2 Tbsp of the Ketchup, the water, the boullion base and the worstershire sauce and add to the TVP. Let soak for 5 minutes.
3. Heat the oil over medium heat in a medium pan and add garlic, stirring often until softened.
4. Add the onion and celery and heat until onion is translucent.
5. Add carrot and cook, stirring frequently, about two minutes and then add the TVP mixture.
6. Add oregano and black pepper and cook about 10 minutes, stirring occasionally.
7. Set aside and let cool for a few minutes until it isn't steaming hot, but still warm.
8. Add oat flour, adding 1 tbsp at a time and stirring in between to make sure it is well incorporated.
9. Add Vital wheat gluten the same way as oat flour.
10. Add egg replacer and stir very, very well.
11. Place in a small loaf pan or 4 individual loaf pans that have been sprayed with olive oil and press firmly.
12. Top with remaining ketchup and bake for 30 minutes.

Makes 4 servings.
