Chicken Barley Crock Pot casserole

Introduction

Number of Servings: 8

Ingredients

    Pearl Barley 1.5 cups raw
    5 boneless, skinless chicken breast tenders
    1 shallott
    1 clove garlic
    2 tbsp italian seasoning
    2 tbsp olive oil

Directions

Brown barley in fry pan for 3-5 minutes in 1 tbsp of olive oil. Cut chicken breast tenders into pieces. Place browned barley in crock pot. Next saute garlic, shallotts and chicken in 1 tbsp olive oil. Add this to the barley in the crock pot.

Add 1 can cream of chicken with herb soup and water.
Cook on low until barley is tender. In my crock pot I set it for 6 hours.

Add seasoning to taste if you wish.

Makes 8 or so 1 cup servings

  • Seriously! this recipe totally sucked as far as directions are concerned! I followed it to a t...no water...burned on the edges, got home after 5 hours and added 3 cups of chicken stock and scooped out burned portion...turned out yummy but was frusterating to try and follow this recipe - 8/23/10
