Chinese Curried Beef

Number of Servings: 4

Ingredients

    %00g Flank Steah (I use Rump)
    3 Potatoes
    2 Onions
    2 Teaspoons Curry Powder
    1 Tablespoon Light Olive Oil
    ! Tablespoon Light Olive Oil Extra
    2 Teaspoons Curry Powder Extra
    2 Tablespoons Satay Sauce
    1 Tablespoon Sweet Chilli Sauce
    1 Tablespoon Low Salt Soy Sauce
    1/3 cup of Water
    3 Teaspoons Cornflour
    1 Tablespoon Dry Sherry (Optional)

Directions

1. Slice steak thinly, Peel Potatoes cut into cubes, Peel onions and cut into quarters, seperate each layer

2. Heat oil in pan or wok, add potatoes and cook for 5 minutes or till just tender but still crisp. Toss occassionaly. Add onion and 2 tablespoons curry powder, cook further 2 minutes then remove from pan.

3. Heat remaining oil in pan add steak cook till cooked through cooking both sides. Add potatoes, onion and extra curry powder and toss through for 2 minutes.

4.Add combined satay sauce, chilli sauce, soy sauce, water, cornflour and sherry. Toss till sauce boils and thickens, reduce heat and simmer for 3 minutes. Serve with rice.

Serves 4.
