Sweet and Tangy Pork Chops

Introduction

Number of Servings: 7

Ingredients

    1 cup Apricot Jam of your choice. (This one made from homemade jam)
    1 tbsp Chicken bouillon powder.
    2 tsp Garlic Salt
    1 tsp ground mustard
    5 sweet mini peppers
    2 tbsp Pomegranate Jelly (optional)
    Cayenne Pepper
    Smokehouse Pepper or just Black Pepper
    Package of Pork Sirloin Chops (Boneless, Family Pack)

Directions

Heat oven to 350 degrees. Line pan with aluminium foil, place 7 frozen pork chops into pan and bake for 25 minutes without covering top of pan.

Meanwhile.....
Bring 2 cups of water to boil.
Add Apricot jam and chicken bouillon powder, whisk with fork until dissolved.
Dice sweet mini peppers into tiny tiny pieces. (Food Processor works great)
Add remaining ingredients except Cayenne and black pepper.
Boil on med-high for approximately 10 minutes.
Remove from heat let stand until ready to be used.

Once chops have baked for 25 minutes, flip over and cover with sauce. Cover pan with foil and bake another 45 minutes (longer for extra tender). Remove foil and sprinkle the top to your liking with Cayenne and pepper ( my chops were sprinkled with Smokehouse Pepper) bake without foil for 10 more minutes or until pork is lightly browned.

The package of Pork Chop loins used were the long boneless type, 7 individual ones came in the package.
Servings were divided into 4 people, me eating just the smallest one.

Served with long grain brown rice and a dash of soy sauce. (not included in nutrition info)

Serving 1 piece each=7 servings total
Serving 4= 3.5 servings total
