Introduction

Dress a triad of fresh summer vegetables with a zesty lemon vinaigrette. Dress a triad of fresh summer vegetables with a zesty lemon vinaigrette.

Ingredients

    3 cups (about 1 lb.) scrubbed, cubed zucchini
    2 cups frozen corn kernels, thawed
    1 large tomato, cut into 1/3 in. cubes
    2 Tbs. fresh lemon juice
    1 Tbs. olive oil
    1 tsp. ground cumin
    1/4 tsp. salt
    1/4 tsp. pepper

Directions

In a large bowl toss together zucchini, corn, and tomatoes until combined. In small bowl whisk together lemon juice, olive oil, cumin, salt, and pepper. Just before serving, pour dressing over vegetables. (whisk dressing again if necessary). Toss well to coat evenly. Yield: 6 servings; 5 cups.
