Lower-Fat Ham Salad

Introduction

We cut out more than half the mayonnaise and then used the lite version to cut down on the fat. We used regular home baked ham leftovers, so the fat content is higher than if you would use a low-fat ham. Ingredients

    3 cups (24 oz.) ham, cut into hunks
    2 ribs of celery, cut into pieces
    1/2 Vidalia (or other sweet) onion
    1/4 cup bread and butter or other sweet pickle with juice
    1/4 cup spicy brown mustard
    6 Tablespoons light mayonnaise

Directions

Place celery, onion, pickles with juice, mayo and mustard in bowl of food processor and process until chopped. Add ham and process again until ham is chopped. Makes about 12 1/4 cup servings.
