Whole-grain Rice Pilaf

Number of Servings: 6

Ingredients

    2 tsp olive oil
    1/2 cup broken whole-wheat spaghetti pieces
    1/3 cup finely diced onion
    1 can (14 oz) chicken broth
    1 cup instant brown rice
    1 TB chopped fresh parsley

Directions

Heat oil in saucepan over medium-high heat. Add pasta and onion; cook, stirring, until starting to brown, about 3 minutes. Add broth and rice, bring to a boil. Reduce heat to low, cover and cook until liquid is absorbed, 10 to 12 minutes. Remove from heat. Stir in parsley and let stand for 5 minutes.

Makes 6 (2/3-cup) servings
