Pork Rind Fried Chicken

Ingredients

3 1/2 pound bag of frozen chicken tenders, thawed
2-3 bags of pork rinds (I use 1 spicy, 2 regular)
5-6 eggs, scrambled for dipping
2 tbsp black pepper
Oil for frying
Directions
First, finely crush (I use a food processor) the pork rinds & put in a bowl and mix with the black pepper.
Scramble the eggs in another bowl (add a tbsp of water)
Heat the oil in a frying pan (I use cast iron) at a depth of about 1-1.5 inches.
Dip the chicken into the beaten eggs and press it into the pork rinds to cover. Carefully put into the hot oil & fry for a few minutes on each side until cooked.
Drain on paper towels.
I make up the entire bag of chicken at a time and eat it all week! Tastes great hot or cold.

I wonder how this would be baked? That would cut the fat down, as well as the calories... and who doesn't love pork rinds!? - 8/11/10

I've never baked them... but it might work. This is my 'low-carb-everyone-loves-it' go-to recipe. :-) When I was doing low carb, I didn't worry a lot about fat & calories. :-D
