1 Cup low fat buttermilk 1 Cup quick cook rolled oats 1 egg 1/4 cup butter 1/2 tsp salt 1tsp Baking Powder 1/2 tsp Baking Soda 3/4 cup brown sugar 1 cup flour 1 cup blueberries
Mix buttermilk with rolled oats. Let stand for 10 minutes. Add egg and MELTED butter. Mix well. Add dry ingredients and stir until blended. Fold in blueberries and pour into muffin pans. Bake at 400 for 15-20 minutes. Makes approximately 13 servings or average sized muffins.
