Potato Soup

Introduction

Turns out like stuffed baked potato. I happen to like the texture of red potatoes more than the regular ones. Turns out like stuffed baked potato. I happen to like the texture of red potatoes more than the regular ones.
Number of Servings: 6

Ingredients

    5 medium red potatoes with skins on
    1 large leek
    2 cups of chicken broth
    1 cup half and half cream
    1/2 cup real bacon bits
    Dash of garlic powder

Directions

Chop potatoes and leeks finely. Put olive oil in pan and cook potatoes and leeks until they are soft. Partially mash the potato leek mixture until about half the potatoes are mashed and half still lumpy. Add chicken stock and simmer for 20 minutes. Add bacon bits and cream and heat to desired temperature.

Makes about 6 1 cup servings

Can top with cheese and sour cream (not in nutrition count)
