Tomato Salsa

Ingredients

    1 tsp. olive oil (or cooking spray)
    12 plum tomatoes - cored
    1 - 8 oz. can tomato paste
    3 garlic cloves - crushed
    1 cup vidalia onion - chopped
    1 cup green bell pepper - chopped
    1 cup red bell pepper - chopped
    1 tbsp. salt
    1 tbsp. black pepper
    2 tbsp. white vinegar

Directions

Place skillet on medium-low heat. Coat with oil or cooking spray.

Line the outer edge of the pan with the tomatoes. In the center of the pan, put the tomato paste. Allow the tomato paste to heat, then place the garlic in the center of the pan.

Allow to heat for 10-15 minutes (until the tomato paste has turned bright red and the garlic has become soft). About halfway through this time, flip and rotate the tomatoes.

Add the remaining vegetables and vinegar. Gently stir to coat the vegetables with vinegar and tomato paste. Allow to cook for 15 minutes.

Use a fork and knife to chop the softened tomatoes into smaller pieces. Add salt and pepper.

Cover and cook for an additional 15 minutes, stirring occasionally.
