Microwave Egg & Cheese Casserole

Introduction

High protein, low carb breakfast or snack. Try broccoli & cheddar or asparagus and swiss! Could try cubing up a piece of bread and mixing it in too! High protein, low carb breakfast or snack. Try broccoli & cheddar or asparagus and swiss! Could try cubing up a piece of bread and mixing it in too!
Number of Servings: 1

Ingredients

    1 egg
    1/2 cup lowfat cottage cheese
    1/4 cup lowfat shredded cheese (I used mozzarella)
    1/2 cup spinach (or broccoli, asparagus, peas, mushrooms, kale, etc...) I used spinach for calculations - cooked and drained
    *seasonings to taste (seasoned salt, hot sauce, pepper....)

Directions

Mix everything up in a microwavable bowl and microwave for 1 1/2 minutes, stir and microwave another minute or two until set. Let cool and enjoy! This is good by itself (low carb) or like a spread on toast or biscuits. Even over leftover brown rice.
