Minnesota Minestrone Soup

Introduction

Number of Servings: 12

Ingredients

    2 lb leanest ground beef
    1lg. onion, chopped
    1 clove garlic, minced
    4 lg tomatoes OR 1-28oz can tomatoes
    1 15oz can kidney beans
    2c fresh sweet corn off the cob OR 1 lb bag frozen corn
    1c chopped celery
    2c chopped cabbage
    2c beef consume' OR beef bouillon and 2c water
    1 1/2 t salt
    1 1/2 t Italian seasoning
    1 med zucchini (seed if zucchini is large)
    1c. elbow macaroni
    Grated Parmesan cheese (ff)


Directions

Cook and stir meat, onion and garlic until meat is brown.
Drain off fat
Stir in peeled tomatoes, kidney beans, and corn (include all liquid) celery, cabbage, seasoning and zucchini.
Heat to boiling; reduce heat. Cover and simmer, stir occasionally.
Cook until veggies are tender. About 30 minutes
Add macaroni last 10 minutes of cooking
Serve and sprinkle w/ tsp parmesan cheese
Enjoy w/ a crusty bread.
