Cucumber Wonton, Spinach and Chicken Soup

Introduction

I had picked up Trader Joe's cucumber Wonton rolls cause they looked so yummy but then didn't really know what to do with them. This is what I had on hand and came up with. My husband and boys (6 and 8) loved it!!

You could omit the chicken and use veg broth to make this vegetarian.

Number of Servings: 6

Ingredients

    4-6 cups Broth (Chicken) (Pacific organic) low sodium
    8 oz Chicken Breast cut in to small peices (I had one large thawed ck breast to use)
    Onions, raw, .5 small (I used red and diced very small)
    2 cloves minced garlic (divided)
    Carrots, raw, 2 large diced
    Cilantro, raw, 3 tbsp (remove)
    Bay Leaf, 1 tsp, crumbled (remove)
    1/4 c cooked Organic Quinoa
    Whole bag Trader Joe's (Cucumber Wonton Rolls
    3-4 cups Organic Spinach
    Chili Garlic Sauce (Lee Kum Kee), 2 tbsp (divided)

Directions

Pour broth in pan, start to warm it. In the mean time saute onions and 1/2 the garlic in another pan. When done add to broth. Spray pan with oil, add rest of the garlic and cook chicken till almost done. Add to broth. Add diced carrots, (you can add celery or other veggies at this point) quinoa,cilantro and bay leaf. Bring to a boil. Reduce heat, add bag of wontons, cook for just 2-3 min then add spinach. Put a lit on it and let the spinach wilt. Ladle into bowls ( I tryed to get 2-4 wontons in each bowl), then add the chili garlic sauce to taste.*

Serves 6-8 1 cup servings.
Serve with warm whole wheat roll.
*Now depending on your heat tolerance will depend on how much chili garlic sauce you add. I added it to each persons bowl (knowing my husband loves heat, my boys not so much, and I some where in the middle). I added 1-2 tsp for my husband, 1/4 a tsp to 1/2 cup serving. I added just under a tsp to 1 cup.
