Lemon Potatoes

Ingredients
* *Potato, raw, 3 small (1-3/4" to 2-1/2" dia.) (remove)
* Lemon juice Goya, 8 tsp (remove)
* Olive oil Vigo, 1 tbsp (remove)
* Tomatoes, Baby Plum, 200 gram (remove)
* Sea salt coarse Alessi, 1 serving (remove)
* Pepper, black, 2 tsp (remove)
* Oregano, ground, 2 tsp (remove)
* Rosemary, dried, 1 tsp (remove)
Directions
Mix all ingredients except potatos in glass baking dish, whisk together, then add potatoes. Put in oven at 350 degrees for 1 hr. After 1 hr remove liquid and continue roasting potatoes for 45 minutes. Remove from oven and put on plate, pour reserved heated liquid over potatoes. My personal opinion is this is too long a process for potatoes and is not energy efficient. Next time I will cook on stovetop.
