Spaghetti Squash with Marinara sauce

Introduction

Homemade spaghetti with lower carb spaghetti squash. Homemade spaghetti with lower carb spaghetti squash.
Number of Servings: 4

Ingredients

    1 small spaghetti squash, cooked
    1 pound ground beef
    1 can Hunt's Tomato sauce
    1/4 cup onion, diced
    1 teaspoon minced garlic
    1 teaspoon basil
    1 teaspoon oregano

Directions

Cut open squash and remove seeds from center. Place face down on a cooking sheet covered with foil and sprayed with PAM. Roast in a 400 degree oven for an hour, or until squash is soft and interior separates into strands. (Magic, huh?)

Meanwhile, brown the hamburger with the onion and garlic in a non-stick skillet. When beef is thoroughly cooked, add the spices and the tomato sauce and simmer for at least 30 minutes, until flavors blend.

Serve marinara sauce over squash strands. At 12 carbs per serving, it's a lot fewer carbs than the standard pasta version, which packs something on the order of 41 carbs just for the noodles.

  • Ive never even had spaghetti squash before, this was an awesome surprise! I wasnt sure what size can of tomato sauce you had used, but I ended up using 2 15oz cans. I even threw in a can of diced tomatoes. We like our sghetti saucy. Other than that some fresh ground pepper and YUMMIES! - 8/16/11
