Tuna and Black bean salad

Ingredients

    1 can tuna
    1 head redleaf lettuce chopped
    1 small can diced black olives
    2 medium sized tomatoes chopped
    4 green onions diced
    1 can black beans drained and rinsed
    1 tablespoon flaxseed
    1 cup chopped walnuts

    *note: to lower fat intake, omit nuts from recipe

Mix all ingredients in large bowl, and serve plain or with dressing. If adding dressing, be sure to add the extra calories!

  • OK..I added a Tblsp of Italian dressing to spice it up a bit.

    Note: the black beans are not included in the calorie count! - 1/7/10

  • Absolutely delicious, especially for anyone who hates mayo in their salads. I substituted artichoke hearts for red leaf lettuce and added a raspberry balsamic vinegrette but it's good as is. - 5/11/09
