Ingredients

    1/4 cup honey
    1 Tbsp butter, melted
    1 Tbsp applesauce
    1 egg
    1/4 cup buttermilk (or sour milk, or yogurt)
    1/2 teaspoon vanilla
    1/8 teaspoon salt
    1/3 cup whole wheat (spelt) flour (sifted)
    1/4 cup Flaxseed meal
    1/3 cup protein powder
    1/4 teaspoon baking soda

Directions

In a large bowl beat together the honey, butter, egg, buttermilk and vanilla. Mix until emulsified and smooth. Add the salt, flour protein powder, flaxseed and baking soda. Beat well. Turn the batter into 5 well oiled muffin cups. Bake at 350 for 15-20 minutes. Remove from oven and cool before serving.
