Easy Vegetable Soup

Introduction

This is an easy soup to throw together on a busy day. It's even better the second day after a night in the refrigerator! This is an easy soup to throw together on a busy day. It's even better the second day after a night in the refrigerator!
Number of Servings: 11

Ingredients

    1 lb. lean ground turkey (ground beef would work too!)
    1 medium white onion
    3 15 oz. cans mixed vegetables
    1 14 oz can petite diced tomatoes
    2 cups V8 vegetable juice
    2 tsp. white pepper
    2 tbsp. beef boullion granules

Directions

Peel and cut the onion into large pieces and cook them with a little water until they are beginning to be transparent. Add the ground turkey and cook until no longer pink. Add the vegetables, tomatoes, V8 juice and seasonings, and heat through until boiling. Makes 11 1-cup servings.

  • Before fixing this recipe I have a question on the nutritional information. It tates for 1 serving. All the amounts for fat and calories and sodim are really really high. Is this correct? JustMe4Now - 7/24/10

    Actually the nutrition info is for 11 servings. Still looking for a way to edit it!!
    Edit: I finally figured out how to edit it, it shows the proper nutrition info per serving now. Cheers, and enjoy!
