Pizza Rice Casserole

Introduction

Orginal receipe called for 16 oz tomato sauce which I cut down to 12oz and 1.5 cups cottage cheese which I reduced to 1 cup. I did this to try to reduce the sodium in the receipe. Ingredients

    2/3 C uncooked Uncle Ben's Whole Grain Instant Rice
    1 1/3 C water
    8oz lean ground beef
    1/4 C onion
    12oz tomato sauce S&W organic
    1 teas minced garlic
    1 pkg stevia
    dash of pepper
    1/4 teas oregano leaves
    1 teas parsley flakes
    1 C low fat cottage cheese
    4 oz grated Albertson's Mozzarella Cheese part skim

Directions

Cook rice. Brown ground beef & onion. Add tomato sauce and spices. Cover and simmer 15 minutes. Combine cottage cheese and rice. Put 1/3 rice mixture in lightly oiled dish. Top with 1/3 meat-tomato sauce. Continue to alternate layers, ending with tomato sauce. Sprinkle with grated cheese on top. Bake at 325 for 30 minutes or until bubbly. Makes 6 servings (about 10 cups)
