Potato Salad - New American Diet System

Number of Servings: 6

Ingredients

    2 Lbs red potatoes
    1 hard boiled egg with yoke
    2 hard boilded eggs (whites only)
    1/2 C chopped sweet pickles
    1/4 C chopped onion
    dash of pepper

    Dressing:
    1 C plain nonfat yogurt
    1/4 C safflower mayonnaise
    6 Tbs sweet pickle juice
    1 Tbs mustard

Directions

Boil 2 Lbs red potatoes with the skin on until tender. Slice potatoes when cool. Add hard boiled eggs that are chopped, pickles, onion, and pepper. Refrigerate in covered container until serving time.

Just before serving mix dressing with potato mixture, Garnish with paprika. Left over salad will become dry and will need more dressing made.
