Banana Truffle Pancakes

Number of Servings: 4

Ingredients

    * 1 - 1/2 cup raw oatmeal
    * 3/4 cup whole wheat flour
    * 1 Tbsp Baking Powder
    * 1 Tbsp Skim Milk Powder
    * 1 Tbsp Sugar
    * 3/4 tsp Cinnamon
    * 2 eggs
    * 3/4 cup skim milk
    * 4.5 inches of banana (cut into three 1.5 inch pieces)
    * 1.25 cups of Rice Krispies
    * 2 Medium Bananas

Directions

# Preheat oven to 350 degrees.
# Combine dry ingredients in small bowl (excluding rice Krispies). Mix in milk & eggs.
# On a plate, spread out Rice Krispies
# Grease cookie sheet.
# Cut Banana into 12 segments
# Take one segment of banana and coat in the pancake mix. It will be kind of sticky and wet, but thatís fine.
# Form ball around the banana segment, and then roll in the crushed pecans.
# Place on greased cookie sheet.
# Repeat with other banana segments.
# Bake at 350 for 15 minutes.
# Remove, plate, and drizzle in maple syrup (syrup or other toppings not included in nutritional info).
# Enjoy!
