Introduction

Janelle's easy greek pasta salad (made with high fiber pasta and veggies from the CSA, which may change depending on what is received) Janelle's easy greek pasta salad (made with high fiber pasta and veggies from the CSA, which may change depending on what is received)
Number of Servings: 12

Ingredients

    1 box whole wheat high fiber pasta (like farfalle or penne)
    2-3 medium summer squash
    2 small eggplant
    1 green pepper
    2-3 carrots OR 1/2 bag crinkle cut carrots
    1 pint grape tomatoes
    (may substitute other veggies as available)
    3/4 cup greek salad dressing

Directions

Boil pasta according to package directions and drain. Chop veggies to desired size; steam squash and eggplant to desired tenderness. Toss all vegetables and pasta with Greek dressing and refridgerate overnight.
