Kay's Grilled Chicken Wrap

Submitted by: JAMKAR84

Introduction

A quick and easy dinner or lunch made fresh. George Foreman double sided grill is used to cook chicken and therefore cuts the time in half! A quick and easy dinner or lunch made fresh. George Foreman double sided grill is used to cook chicken and therefore cuts the time in half!
Number of Servings: 1

Ingredients

1 Chicken Breast (Skinned and de-boned)
    1 Tortilla (Burrito size)
    1/2 Medium sized Salad Tomato
    1 Cup of Lettuce (shredded)
1/2 tsp Mustard (Optional - a little mustard goes a long way with tortillas)
    1 Jalapeņo Pepper (Optional)
    Pickle (2 chips) (Optional)

Directions

Grill the chicken breast until properly cooked (It takes 9 mins on my George Foreman grill, which is a double sided grill). Let the chicken rest for a few minutes before slicing or shredding it (Shredding the chicken...kinda like pulled meat tastes better in my opinion, than when it's just sliced and it spreads more).

P.S. If you shred the chicken breast, add a little BBQ sauce, gives it a nice flavor (BBQ sauce not calculated in nutritional info).

While the chicken is being cooked, cut up the tomato and jalapeņo into small pieces and shred the lettuce (whichever type of lettuce you like) and set it aside.

When the chicken has finished cooking, warm the tortilla in the microwave for about 30 secs. Place the cooked chicken on the tortilla and add the lettuce, tomato, jalapeņo and pickle chips. You can add a little mustard if you want.

Roll the tortilla (try to keep all the stuff inside) and cut in two.

This whole recipe is one serving and low calorie (Well, as low as you can get with chicken :) )

Hope you enjoy.
