Introduction

I made this up when I was craving Vegetable Korma and didn't want to search for all the spices and ingredient. I found this sauce in the store and it tastes authentic. Very simple and tasty! I made this up when I was craving Vegetable Korma and didn't want to search for all the spices and ingredient. I found this sauce in the store and it tastes authentic. Very simple and tasty!
Number of Servings: 4

Ingredients

    1 Jar Seeds of Change Organic Korma Simmer Sauce
    1 small crown of broccoli, cut
    1/2 c frozen green beans, thawed
    1/2 c frozen peas, thawed
    1/2 c eggplant
    1/2 c coursely chopped mushrooms
    1 medium onion, cut on 1/4s and sliced
    1 Tbsp vegetable oil
    2 cups cooked brown basmati rice

Directions

Boil the broccoli until just soft. While that is boiling, sautee the onions in vegetable oil until translucent. Add the mushrooms and eggplant and cook until mushrooms are soft. Add the peas, broccoli, beans, and korma sauce. Simmer for 10-15 minutes to allow flavor to soak in and veggies to heat through.

A serving is 1/4 of the recipe with 1/2 cup of rice.
