Low Fat Beef Stew

Ingredients

    2 1/2 pounds beef round, cut into 1 inch cubes
    1 cup carrots, peeled
    3 small potatoes, peeled and cut into 1 inch sections
    1 cup celery, cut into 1 inch sections
    1 cup onion, cut into 1 inch pieces
    1/2 bell pepper, cut into 1 inch pieces
    2 cubes beef bouillon
    1 cup water
    Cooking spray
    3 cloves fresh garlic, peeled and crushed (optional)

Directions

Cut beef round into one inch cubes (and garlic if desired) and brown in saucepan with cooking spray. Cut celery, onions, bell pepper and potatoes into 1" pieces. In pressure cooker, combine beef, vegetables, bouillon, spaghetti sauce, tomato, and water. Cover with pressure lid, bring to a boil, lower heat and set weight for 45 minutes. Remove from heat and set aside until cover can be safely removed. Stir and season, adding salt and pepper as desired. Makes 6 two-cup servings.
