1/2 lb lean ground turkey
1/2 lb lean ground sirloin
2 cups diced green peppers
1 can diced tomatoes
1 large can crushed tomatoes
16 0z V8 juice
1-2 cups lowfat chicken broth (used to thin)
1 cup Minute Rice, brown uncooked
salt & pepper
1/2 tsp cinnamon
Brown beef and turkey, add in diced peppers. Strain any excess fat. Season w/ S&P, cinnamon and add bay leaf. Add tomatoes and juice. Add broth to bring to desired consistency. Bring to boil. Add rice and simmer until rice is tender. Remove bay leaf. Enjoy.
