Chik'n Lettuce Wraps

Introduction

Ingredients

    1/4 of a red onion chopped
    5 mushrooms chopped
    1 clove of garlic
    1 tbsp of extra virgin olive oil
    1 lemon wedge
    1tsp black pepper
    3 iceberg lettuce leaves
    1 Quorn* naked chik'n cutlet (Quorn is a brand of vegetarian product, but tofu or other brands of imitation chicken would work, I just prefer the texture of this one for this recipe)

Directions

Add most of the EVOOl to small saute pan, add onions and soften about a minute, add mushrooms and sprinkle with some pepper cook about a minute more.

Rub Quorn cutlet with some of saved oil on both sides and sprinkle with some pepper add to same pan, just clear some room, cover and cook 4-5 minutes on each side until brown.

At last minute clear a small space and add rest of oil and garlic and let soften then mix with onions and mushrooms. Chop Quorn cutlet and mix all togther.

Divide into three leaves of lettuce and wrap like a burrito. Serves 1 as a filling meal or 3 as a light snack.
