Chocolate Chip Banana Flax Muffins

Introduction

Super banana-y muffins with flax meal instead of butter and just a sprinkling of chocolate chips. Perfect for breakfast with some peanut butter, and freezes well for later. Ingredients

    2 cups whole wheat pastry flour or white whole wheat flour
    1 tsp baking soda
    1/4 tsp salt
    1/2 cup water
    2 tbsp flax meal
    3/4 cup brown sugar
    2 eggs, beaten
    2 1/3 cups mashed overripe banana
    1 tsp cinnamon
    1/4 cup semisweet chocolate chips

Directions

Combine flour, salt, baking soda, set aside.
Combine water and flax meal. Let sit for a few minutes.
Meanwhile, combine banana, eggs, and sugar. Stir until sugar is dissolved. Add flax meal mixture.
Combine with dry ingredients. Stir until moist and well combined, but don't over mix. Fold in chocolate chips.

Line a muffin pan with paper cups and/or spray with cooking spray. Pour batter into muffin cups, approximately two heaping tablespoons per cup. For me, this makes 15 muffins.

Bake at 350 for 30-40 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
