IntroductionA nicely spiced chicken and rice dish. A nicely spiced chicken and rice dish.
450g(16oz) finely minced raw skinless boneless chicken breast
1 Tablespoon olive oil
1 Tablespoon garam masala
2 teaspoons ground cumin
1/2 teaspoon ground tumeric
1 onion thinly sliced
3 cloves garlic minced
2 teaspoons freshly ground ginger
cooked brown rice(3/4 cup raw)
3/4 cup chicken stock
Heat oil in nonstick skillet. When hot add chicken, toss to coat with oil and cook til brown. Add onion, garlic and ginger. Cook til onions soften. Add rice and combine. Add broth and place mixture in baking dish. Cook for 40 minutes at 350. Serve with yogurt on the side. Serves 4
