Taco Mac Salad

Ingredients

    1 box (8 oz.) Whole Wheat spiral macaroni
    1 lb. ground turkey
    1 pkg taco seasoning
    1 can black beans, drained
    1/2 cup green peppers, chopped
    1/4 cup onions, chopped (add more to taste)
    1 cup cheese - cheddar, shredded
    1/2 carton cherry tomatoes
    head lettuce, shredded (add more to go further if more servings needed)
    salt
    pepper
    1/2 cup FF french dressing
    5 oz nacho doritos (can be baked Doritos)

Directions

Saute onion, Brown ground turkey and season with taco mix. Combine together.

Cook macaroni as directed. Drain. Rinse with cold water. Drain again. In a large bowl mix macaroni, red(or yellow) pepper, cheese, tomatoes, lettuce, & seasonings. Chill. Just before serving, stir in warm seasoned ground meat mixture, french dressing and chips. Toss lightly.

If used as a side salad then makes 10-12 servings (approx 253 - 304 cal) If used as main course, makes 8 servings. (383 cal)
