Quick Chili Vegetable Soup

Introduction

This is a wonderful quick fix soup for a light lunch or dinner. Serve with corn muffins and chocolate cake for desert. This is a wonderful quick fix soup for a light lunch or dinner. Serve with corn muffins and chocolate cake for desert.

Ingredients

    28 Oz Can Diced Tomatoes
    15 oz can Kidney Beans (Dark Red)
    2 Chicken bouillon cubes - made into 2 cups broth
    2 stalks celery, sliced
    2 medium carrots, sliced
    1 medium Onion, diced
    2 tsp chili powder


Directions

Bring all ingredients to a boil in medium saucepan. Simmer on low about 25 min or until vegetables are tender.

Makes 4 servings - about 1 3/4 cups each.
