Apple Cinnamon Cups

Ingredients

    Cottage Cheese, 1% Lowfat Small Curd, Friendly Farms, 3 cups
    100% Liquid Egg Whites, Member's Mark, 1 cup
    Apples, fresh, 2 medium (2-3/4" dia), chopped
    Cinnamon, ground, 2 tbsp
    DaVinci Gourmet Vanilla Syrup Sugar Free, 2 tbsp

Tips

These are pretty good (even though they may not sound very appetizing). I used the DaVinci, but will probably use liquid stevia, powdered erythritol and pure vanilla the next time.


Directions

Spray a 12-cup muffin pan with cooking spray and preheat oven to 325 degrees. In large bowl stir together cottage cheese, egg whites, cinnamon & chopped apples until blended. Fill cups up to the top with cottage cheese mixture. Bake in preheated oven for 35-40 mins or until done.
Before serving let cool to firm. Use butter knife to go around the edges to lift out the apple cups & serve.
