Mashed "Thai" plaintains

Introduction

I know that Thai food and plantains are not a common combination...but I thought that this might taste good, so I made it and thought you might enjoy it as well. Number of Servings: 2

Ingredients

    1 medium ripe plantain
    1/2 cup of apple juice
    2 tsp brown sugar (unpacked)
    Thai Style Peanut Sauce (I used Kikkoman)

    Optional: small amount of seed, nuts, or raisins for topping

Directions

Cut one medium sized plantain in diagonal slices. Then boil the ripe plantain in a half cup of apple juice and two tsp of brown sugar. (Bring to boil then lower heat to med/low after boiling on high for a couple of minutes. Leave the cover on the pan...you want to steam them more than cook them.) Stir occasionally.
drain any extra liquid once the plantains are very soft and mushy. Mash them up with a potato masher or a fork and then add the Thai Peanut Sauce to taste. I found one tbsp to be adequate. If you only use one tbsp...then reduce the number of calories listed by 20 per serving.
Top with some chopped nuts or some raisins if you wish.

One medium plaintain makes two side dish servings.
