Ingredients

    1 Spray Olive Oil Cooking Spray
    1/4 chopped Garlic
    1 cup, chopped Onions
    1/'2 cup Sliced Jalapeno Pepper,
    2 14 ounce Cans Vegetable Broth, Ready to Serve
    1 8 ounce Can Tomato Sauce
    3 Cups Water
    1 Tablespoon Basil
    1 Tablespoon Oregano
    1 Tablespoon Crushed Red Pepper
    1 Cup Chopped Broccoli
    1/2 Cup Chopped Roma Tomatoes
    1/2 Cup Grated Carrots
    2 Cups Canned Chickpeas
    1 Cup Shredded Red Cabbage
    4 Cups Chopped Zucchini
    3 Cups Chopped Okra
    4 Diced Boneless, Skinless Chicken Breasts, Precooked
    1/2 Cup Fat Free Sour Cream to Garnish

Directions

* All vegetables should be roughly chopped for a "farmhouse" feeling.

Spray bottom of large, heavy pot with Olive Oil cooking spray

Saute Garlic, Onions and Jalapeno until Onion is translucent

Add canned vegetable broth, tomato sauce, water, basil, oregano, and crushed red pepper flakes
Bring to simmer

Add balance of vegetables and simmer approximately 30 minutes, or until vegetables are tender.

Add pre-cooked chicken to the pot and bring back to a simmer

Garnish each bowl with approximately 1 Tablespoon fat free sour cream.

Makes about 14 hearty 1 cup servings
