Ingredients

5 oz frozen spinach
1 tsp olive oil
1 tsp fresh minced garlic
1/2 c. chopped red onion
2 large eggs
1/2 c. low-fat cottage cheese
Directions
Preheat oven to 375.
Heat olive oil in a frying pan. Add minced garlic and onions and sautee for a few minutes. Add the spinach and heat on a low flame until the spinach is completely thawed.
In a separate bowl, beat two eggs and add in the cottage cheese.
Add the contents of the frying pan to the bowl of eggs and mix thoroughly.
With a paper towel, lightly oil the inside of three ramekins or a medium sized pyrex dish. Pour the contents of the bowl into the baking dishes evenly, keeping the level at least an inch below the rim of the bowl.
Bake at 375 for 30-45 minutes, until the eggs are set.
