Ingredients

4 medium baking potatoes
1 cup shredded cheese
1/4 cup light sour cream
1/4 cup nonfat milk
4 tsp olive oil
1 tsp dijon mustard
1/8 tsp salt
1/8 tspcayene
Directions
Preheat oven to 425 degrees. Pierce potatoes in several places w/ fork and bake until the skin cracks slightly when pressed, about 1 hour. Reduce oven temp to 375 degrees.
Halve the potatoes lengthwise. Scoop out the pulp, leaving about 1/4" shell intact. In a medium bowl, combine potato pullp, cheese, sour cream, milk, oil, mustard, salt, cayenne. Spoon the mixture into the potatoes shells, place on baking sheet. Bake until hot and bubbling, about 10 min.
