Introduction

Number of Servings: 6

Ingredients

    2 cups celery, chopped
    1 cup onion, chopped
    1 10oz package broccoli, chopped
    1 cup 1% cottage cheese
    2 cups 1% milk
    1 cup chicken broth
    pepper, to taste

Directions

Combine celery, onion, broccoli and chicken broth. Bring to a boil. Cover, reduce heat and simmer 10 minutes or until veggies are tender.

Place 1/2 of soup mix and 1/2 of cottage cheese in blender. Blend until smooth. Place in pan and repeat with other half of broth/veggie mix and cottage cheese.

Add milk and pepper, heat through...do not boil. Serve with crusty bread, cheese slices and or fruit nibbles. Makes about 6 cups/servings.

Tips:
- Use non-fat ingredients as needed (I kinda, sorta cringe at fat-free cottage cheese, it's pretty damn tasty in this recipe though).

- Replace the frozen broccoli with 1 1/2 cups of fresh broccoli, finely chopped.

- If you like spice, like we do, add a couple of shakes of red chili flakes or a dollop of your fave hot sauce in the blender.

- For a chunkier soup only blend 1/2 of the veggie/broth mix with all the cottage cheese.
