Chicken Vegatable rice

Introduction

My family loves this and its a way to get them to eat veggies My family loves this and its a way to get them to eat veggies
Number of Servings: 8

Ingredients

    2 whole boneless, skinless chicken breast or 4 half breasts-Cubed
    4 cups Instant rice
    6 cups low sodium chicken broth
    1 tsp Parsley
    1 cup raw carrots
    1 cup cooked broccoli chopped

Directions

-cook chicken cubes in 2cups Broth till done (15-20 mins). -while that's cooking steam carrots and broccoli.
-bring remaining 4 cups of broth and parsley to a boil add instant rice and remove from heat, cover and let sit 10 mins or until all broth is absorbed.
-combine all ingredients mix well
makes 8 - 1cup servings
