2 whole boneless, skinless chicken breast or 4 half breasts-Cubed
4 cups Instant rice
6 cups low sodium chicken broth
1 tsp Parsley
1 cup raw carrots
1 cup cooked broccoli chopped
-bring remaining 4 cups of broth and parsley to a boil add instant rice and remove from heat, cover and let sit 10 mins or until all broth is absorbed.
-combine all ingredients mix well
makes 8 - 1cup servings
