Shrimp Pad Thai

Number of Servings: 4

Ingredients

    1 box Pad Thai rice noodles, cooked, drained and rinsed as instructed on box
    16oz Raw Shrimp
    4 shallots
    2 cloves garlic, minced
    4 Tbsp oil, divided
    2 eggs, beaten lightly
    2 Tbsp lime juice
    3 Tbsp Fish Sauce
    3 Tbsp sugar
    Pinch, red pepper flakes

    Optional: Peanut pieces as garnish.

Directions

Heat non-stick skillet with 2tbsp oil. Saute shrimp, garlic and shallots until shrimp turns orange. Remove from skillet and set aside. Add remaining 2tbsp oil and scramble eggs. Add noodles and sauce, mixing well. Add back shrimp and shallots. Heat thoroughly and serve with sprinkling of peanuts as garnish.

Sauce: mix together lime juice, fish sauce, sugar and red pepper flakes.
