Italian Sausage

Submitted by: CINDYOWE

Introduction

I'm following the DSP diet plan which does not allow gluten or sugar. I made these because I wanted a sausage that didn't contain either of the two. They're very hard to find in the stores. This is quick and easy and tastes a thousand times better than the store bought version. I'm following the DSP diet plan which does not allow gluten or sugar. Ingredients

    2 lbs lean ground pork
    1 Tbsp fennel seeds
    2 bay leaves, crushed
    1 Tbsp dried parsley
    3 cloves garlic, crushed
    1 tsp hot chili powder
    1 tsp sea salt
    1/4 tsp pepper
    1/4 cup water

Directions

Put spices and garlic in a food processor and pulse until the fennel seeds are coarsely chopped. Add water if neccesary. Add ground pork in small portions and process until the pork is quite a bit more ground, even a bit mushy. Remove from processor and mix with your hands. Shape into patties or meat balls. Great for breakfasts or pasta dishes.
