Dilly Potato Salad

Introduction

This is a quick potato salad I came up with when I was out of eggs, and other things I usually put in my potato salad. It was a hit. This is a quick potato salad I came up with when I was out of eggs, and other things I usually put in my potato salad. It was a hit.
Number of Servings: 6

Ingredients

    1.5 lbs of red potatoes (small)
    3 tbs dill weed, dried or (.25 cup fresh, chopped with pickles)
    1 cup chopped Dill pickles (I use food processor)
    8 tbs (1/2 cup) light Mayonnaise

Directions

Boil potatoes until they can be pierced with a folk - app. 25-30 min. Drain and add dill weed, chopped pickle, and mayo. Stir together and serve. This is good warm or cool. Serves 6 (1/2-3/4 cup serving)
