Slow Cooker Chipotle-Lime Chicken Thighs

Introduction

My husband and I really enjoy this meal. I reduced the amount of chicken thighs the original recipe called for from 4 lbs, to 5 thighs and kept the sauce and added an extra 1/4 cup of each vegetable. In the past I have added some potatoes. if its to hot and you aren't making coconut rice, i suggest adding brown sugar to balance out the heat of the chipotle pepper. Tastes great served with coconut rice with beans. My husband and I really enjoy this meal. Ingredients

    5 skinless chicken thighs
    1 1/4 cup each onion, celery, and carrots cut up
    salt and pepper
    1 (15 oz) can no salt added tomato sauce
    2-3 tbsp brown sugar
    1/4 cup lime juice
    1 minced chipotle pepper plus 1 tsp adobo sauce
    2 cloves garlic
    1 avocado diced (optional)
    1/4 cup fresh cilantro (optional)
    lime wedges for garnish (optional)

Directions

Each slow cooker is different. I place my meat on the bottom, then vegetables on top. In medium bowl, combine tomato sauce, brown sugar, lime juice, chipotle peppers with sauce, and garlic. Pour over chicken. Cover and cook for 6 to 8 hours on low or high for 3 to 4 hours. Serve topped with diced avocado and cilantro with lime wedges and steamed rice or beans and rice. Number of servings vary depending on number of chicken thighs. I used 6 thighs in this recipe. Avocado is not included in the calorie count.
