White Bean Chicken Chili

Number of Servings: 10

Ingredients

    2 Medium White Onions, chopped
    1 Garlic clove
    1 TB of vegetable oil
    5 boneless skinless chicken breasts, cooked, chopped (4 cups)
    3 (16 oz) cans Great Northern White beans, drained
    5 cups chicken broth, low sodium
    2 (4-oz) cans chopped green chiles, drained
    2 TB cumin
    1 1/2 tsp chili powder
    1/4 tsp cayenne pepper
    1/4 tsp oregano
    1/4 tsp ground cloves
    1/8 tsp paprika
    Monterey Jack cheese

Directions

Makes 8 - 10 (2 cups) servings

Saute the onions and garlic in the oil in a stockpot until the onions are tender. Add the chicken, beans, broth, green chiles, cumin, chili powder, cayenne pepper, oregano, cloves adn paprika and mix well. Bring to a boil; reduce heat

Simmer for 1 hour, stirring occasionally. Ladle into soup bowls, Sprinkle with cheese.
